The first traces of chile were discovered in Bolivia 7,000 years ago. It was then introduced in Central America, in Mexico, and in all Latin America. Known for thousands of years, chile was first used by the Aztecs who turned it into a drink mixed with chocolate, a drink supposed to give courage. Chiles were imported by Christopher Columbus and spread throughout Europe due to its lowest cost compared with pepper.
While fresh chiles have a distinct heat and sweetness, dried chile pepper carries a full-bodied, fruity, raisin sweetness with varying degrees of tobacco and smokiness.

Applications : in curries, sauces, pickles, chutneys and pastes. To flavour olive oil, vegetables, rice, meats, poultry, eggs,... etc. Once too much has been added there is little that can be done, though you can try adding sugar, cream or coconut milk.
