The hibiscus is known since Antiquity. It was cultivated in Egypt and Southeast Asia for a decorative use, but also for its edible fruits. The red flowers are dried and then infused to give the preparations a fruity and acidulous taste.

Applications : to flavour sauces and jams, syrups, teas ans infusions. To flavour desserts such as crème brûlée, mousse, jellies or cakes. Hibiscus is also delicious with scallops.
